Veiled Peasant Girls (Tilslørte Bondepiker)

This curiously named dessert is loved by young and old in Norway. It looks fabulous served in a large glass bowl or in individual dessert dishes and is well suited to round off a fish or a meat main course. Mmmmmm.

300 ml apple sauce - or make your own by cooking 4 peeled and quartered cooking
apples (Bramleys) in a little water and about 100 g sugar until soft.
250 g dried white breadcrumbs - the breadcrumbs should be dry, not fresh, and are easily made by grating a piece of bread a few days old
3 tbsp sugar
250 ml double or whipping cream
½ tbsp or a few drops vanilla

Brown the breadcrumbs and sugar in a dry frying pan at medium heat, then cool.

Whip the cream with the vanilla. 

Arrange apple sauce and crumbs in alternate layers. Finish with cream, and if you like a sprinkling of grated chocolate.
