Who doesn't love a slice of delicious carrot cake? Try making it with a creamy Snøfrisk Icing!
Make in a small baking tin for approx 20 pieces (25 x 30 cm)
2 - 3 grated carrots
7.2 dl sugar
100 gr melted and cooled dairy butter
9.6 dl flour
1 ts vanilla sugar
2 ts baking powder
2 ts cardamom
50 gr dairy butter
200 gr Snøfrisk Natural (soft goat cheese)
4.8 dl icing sugar
1 grated orange peel to top
Whisk the sugar and eggs light and fluffy. Stir the grated carrots and melted cooled butter into the egg and sugar batter carefully. Pour the batter into a well greased baking tin.
Preheat oven to 200 degrees C and bake on middle shelf for 25-30 min.
To make the icing use room temp butter and mix together all the ingredients (not the orange peel) briskly into smooth batter. Cool the cake. Spread the icing evenly over the cake and top with the orange peel. Cut into 20 pieces.
